L&#8217;index se mesure sur une \u00e9chelle de 0 \u00e0 100. Les aliments sont class\u00e9s en fourchettes et plus la fourchette est \u00e9lev\u00e9e, plus l&#8217;augmentation de la glyc\u00e9mie est forte et rapide. Les aliments \u00e0 base de viande et de graisse ne figurent pas sur l&#8217;IG car ils ne contiennent pas de glucides. Les personnes vivant avec un diab\u00e8te de type 2 doivent privil\u00e9gier les aliments situ\u00e9s dans la partie basse ou moyenne de l&#8217;IG, o\u00f9 les aliments sont dig\u00e9r\u00e9s et o\u00f9 la glyc\u00e9mie augmente lentement. L&#8217;utilisation de l&#8217;index glyc\u00e9mique peut \u00eatre utile pour ceux qui pr\u00e9f\u00e8rent ne pas compter les glucides.\u00a0<\/span><\/p>\n<p><b>Les fourchettes de l\u2019index glyc\u00e9mique sont :\u00a0<\/b><\/p>\n<p><span style=\"font-weight: 400\">IG faible &#8211; 0-55<\/span><\/p>\n<p><span style=\"font-weight: 400\">IG moyen &#8211; 56-69<\/span><\/p>\n<p><span style=\"font-weight: 400\">IG \u00e9lev\u00e9 &#8211; 70 \u00e0 100<\/span><\/p>\n<p><span style=\"font-weight: 400\">Il existe des mod\u00e8les pour vous aider \u00e0 d\u00e9terminer comment certains aliments sont susceptibles de se classer dans l&#8217;index. En g\u00e9n\u00e9ral, les aliments transform\u00e9s se situent dans la partie sup\u00e9rieure de l&#8217;\u00e9chelle, tout comme les aliments qui sont cuits pendant de longues p\u00e9riodes. Les aliments contenant plus de fibres se situent g\u00e9n\u00e9ralement dans la partie inf\u00e9rieure de l&#8217;\u00e9chelle. En ce qui concerne les fruits, plus ils sont m\u00fbrs, plus leur IG est \u00e9lev\u00e9. N&#8217;oubliez pas que l&#8217;IG d&#8217;un aliment peut varier en fonction de facteurs tels que sa fra\u00eecheur, son temps de cuisson, son mode de pr\u00e9paration, la vari\u00e9t\u00e9 que vous choisissez et les autres aliments que vous pouvez consommer en m\u00eame temps. Si vous mangez des aliments transform\u00e9s ou d&#8217;autres aliments \u00e0 IG \u00e9lev\u00e9, par exemple, vous pouve<\/span><span style=\"font-weight: 400\">z les m\u00e9langer <\/span><span style=\"font-weight: 400\">avec des aliments \u00e0 faible IG au cours du m\u00eame repas.<\/span><\/p>\n<h3><b>QUELLE EST LA RELATION ENTRE LES GLUCIDES ET L\u2019INDEX GLYC\u00c9MIQUE ?<\/b><\/h3>\n<p><span style=\"font-weight: 400\">Seuls les aliments contenant des glucides sont class\u00e9s selon l&#8217;IG. Les glucides sont l&#8217;un des trois principaux macronutriments de l&#8217;alimentation. Vous avez probablement d\u00e9j\u00e0 entendu parler des deux autres : les prot\u00e9ines et les graisses. Les glucides, les prot\u00e9ines et les graisses sont les \u00e9l\u00e9ments qui alimentent nos cellules, et tous peuvent fournir diff\u00e9rentes formes d&#8217;\u00e9nergie saines. Toutefois, pour les personnes vivant avec un diab\u00e8te de type 2, les glucides requi\u00e8rent plus d&#8217;attention que les autres formes d&#8217;\u00e9nergie, car ils sont les principaux responsables de l&#8217;augmentation de la glyc\u00e9mie.<\/span><\/p>\n<p><span style=\"font-weight: 400\">Ne confondez pas l&#8217;IG avec la quantit\u00e9 de glucides contenue dans un aliment. L&#8217;IG ne refl\u00e8te pas le nombre de glucides contenus dans un aliment, mais mesure plut\u00f4t la propension d&#8217;un aliment glucidique particulier \u00e0 provoquer une augmentation rapide de la glyc\u00e9mie. Comme nous l&#8217;avons dit pr\u00e9c\u00e9demment, en fonction de la pr\u00e9paration et d&#8217;un certain nombre d&#8217;autres facteurs, deux aliments contenant la m\u00eame quantit\u00e9 de glucides peuvent avoir des IG tr\u00e8s diff\u00e9rents. Apr\u00e8s tout, il y a aussi des glucides dans les c\u00e9r\u00e9ales compl\u00e8tes et les l\u00e9gumes \u00e0 feuilles vertes : tous les glucides ne sont pas cr\u00e9\u00e9s de mani\u00e8re \u00e9gale.<\/span><\/p>\n<h3><b>QUEL EST L\u2019INDEX GLYC\u00c9MIQUE DE MON ALIMENTATION ?<\/b><\/h3>\n<p><span style=\"font-weight: 400\">O\u00f9 se situent certains de vos aliments pr\u00e9f\u00e9r\u00e9s sur l&#8217;\u00e9chelle de l&#8217;IG ? Parfois, l&#8217;IG est indiqu\u00e9 sur les \u00e9tiquettes des aliments, mais si ce n&#8217;est pas le cas, une recherche rapide sur internet permet d&#8217;obtenir l&#8217;information. <\/span><a href=\"https:\/\/www.health.harvard.edu\/diseases-and-conditions\/glycemic-index-and-glycemic-load-for-100-foods\"><span style=\"font-weight: 400\">Harvard<\/span><\/a><span style=\"font-weight: 400\"> propose une liste de plus de 60 aliments et leur classement selon l\u2019IG.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400\">L&#8217;IG d&#8217;un aliment n&#8217;est pas intuitif car de nombreux aliments que nous pensons sains ont un IG \u00e9lev\u00e9. Les flocons d&#8217;avoine instantan\u00e9s, par exemple, ont un IG de <\/span><a href=\"https:\/\/www.health.harvard.edu\/diseases-and-conditions\/glycemic-index-and-glycemic-load-for-100-foods\"><span style=\"font-weight: 400\">83<\/span><\/a><span style=\"font-weight: 400\">, alors que les flocons d&#8217;avoine cuits lentement ont un IG de <\/span><a href=\"https:\/\/www.health.harvard.edu\/diseases-and-conditions\/glycemic-index-and-glycemic-load-for-100-foods\"><span style=\"font-weight: 400\">58<\/span><\/a><span style=\"font-weight: 400\">. Ces chiffres nous indiquent que ces aliments lib\u00e8rent<\/span><span style=\"font-weight: 400\"> le glucose dans le sang be<\/span><span style=\"font-weight: 400\">aucoup plus rapidement que, par exemple, le pain aux c\u00e9r\u00e9ales, dont l&#8217;IG est de <\/span><a href=\"https:\/\/www.health.harvard.edu\/diseases-and-conditions\/glycemic-index-and-glycemic-load-for-100-foods\"><span style=\"font-weight: 400\">53<\/span><\/a><span style=\"font-weight: 400\">, ou les cacahu\u00e8tes, dont l&#8217;IG est de <\/span><a href=\"http:\/\/www.peanut-institute.org\/health-and-nutrition\/disease-prevention\/diabetes-and-blood-sugar.asp\"><span style=\"font-weight: 400\">14<\/span><\/a><span style=\"font-weight: 400\">, qui offrent tous deux un<\/span><span style=\"font-weight: 400\">e d\u00e9livrance lente et r\u00e9guli\u00e8re du glucose<\/span><span style=\"font-weight: 400\">, ce qui est pr\u00e9f\u00e9rable.<\/span><\/p>\n<p><span style=\"font-weight: 400\">La bonne nouvelle, c&#8217;est que les personnes vivant avec un diab\u00e8te de type 2 ne sont pas oblig\u00e9es d&#8217;\u00e9liminer compl\u00e8tement les aliments \u00e0 IG \u00e9lev\u00e9. N&#8217;oubliez pas <\/span><a href=\"http:\/\/www.diabetes.org\/food-and-fitness\/food\/what-can-i-eat\/understanding-carbohydrates\/glycemic-index-and-diabetes.html\"><span style=\"font-weight: 400\">que la glyc\u00e9mie est plus affect\u00e9e par la quantit\u00e9 de glucides contenue dans un aliment que par l&#8217;IG<\/span><\/a><span style=\"font-weight: 400\">. Cela signifie que, m\u00eame si le ma\u00efs doux a un IG bas de 52, il reste un f\u00e9culent riche en glucides et doit \u00eatre consomm\u00e9 avec mod\u00e9ration.<\/span><\/p>\n<h3><b>COMMENT INT\u00c9GRER L\u2019INDEX GLYC\u00c9MIQUE DANS MON R\u00c9GIME ?<\/b><\/h3>\n<p><span style=\"font-weight: 400\">Donc, s&#8217;il existe des aliments dont l&#8217;IG est bas mais qui sont encore suffisamment riches en glucides pour que l&#8217;on doive les limiter dans notre alimentation, \u00e0 quoi sert l&#8217;index glyc\u00e9mique ? Et bien, consid\u00e9rez-le comme un outil de plus parmi d&#8217;autres pouvant \u00eatre utilis\u00e9 pour g\u00e9rer la glyc\u00e9mie. Il ne doit pas remplacer d&#8217;autres outils pr\u00e9cieux comme le sport et le comptage des glucides.<\/span><\/p>\n<p><span style=\"font-weight: 400\">Un certain nombre de r\u00e9gimes populaires sont bas\u00e9s sur l&#8217;index glyc\u00e9mique et <\/span><a href=\"https:\/\/www.ncbi.nlm.nih.gov\/books\/NBK279012\/\"><span style=\"font-weight: 400\">des choix \u00e9clair\u00e9s<\/span><\/a><span style=\"font-weight: 400\"> et l\u2019approche \u201cceci par cela\u201d <\/span><span style=\"font-weight: 400\">pour la perte et le maintien du poids. Remplacer &#8220;ceci par cela&#8221; pourrait signifier qu&#8217;au lieu du pain blanc, vous pourriez choisir un pain contenant des c\u00e9r\u00e9ales compl\u00e8tes. Au lieu des tortillas \u00e0 la farine, vous pourriez choisir du ma\u00efs.
